IRISH SODA BREAD
Who doesn’t enjoy a good homemade Irish Soda Bread? :]

Ingredients:

2 cups all purpose flour
-
2 cups whole wheat flour
-
1 tbsp. baking powder
-
1 tsp baking soda
-
1 tsp coarse salt
-
¼ cup (half a stick) softened butter
-
1 ½ cups buttermilk
-
¼ cup molasses
-
2 tbsp. heavy whipping cream
-
2 tbsp. regular rolled oats
Directions
Preheat oven to 375, butter an oval 2 quart casserole dish, set aside.
In a large bowl, sift together flour, whole wheat flour, baking powder, baking soda and salt. Add butter.
Using a pastry blender, cut butter into flour mixture until crumbly.
Add buttermilk and molasses.
Using wooden spoon, stir just until a wet dough forms.
On a lightly floured surface, shape dough into an oval and place in prepared baking dish.
With a sharp knife, cut 3 diagonal slits across top of dough. Brush dough with cream and
Sprinkle with oats.
Bake until light brown and cooked through, 60 – 70 minutes. Transfer to a wire rack to cool slightly.
Slice and serve warm with blue cheese spread. ( ½ C butter and ½ C blue cheese softened and mixed well)
POTATO SOUP
If the weather where you live is anything like the weather here then it may be too warm for this. But I love this recipe. :]

Ingredients

5 lbs. white potatoes

1 large onion, chopped
-
stick of butter
-
6 tbsp. flour
-
3 cans milk
-
salt and pepper to taste
-
fresh parsley, chopped
-
Garnish: grated cheddar cheese, real bacon bits
Directions
Peel potatoes and cut in to bite size pieces. Put in large soup kettle. Add just enough water to cover potatoes. Cook until tender but still firm. Removed from heat. Skim off 3-4 cups of the water.
While potatoes are cooking, chop onion and cook in large pan in butter. When the onions start to brown, add flour. Stir well and cook a few minutes. Slowly add milk. Stir until heated. Pour milk mixture in to kettle with potatoes and stir gently to mix. Add salt and pepper to taste. Before serving, add parsley to soup and stir to mix. After ladling in to soup bowls, garnish with grated cheese and bacon bits if desired.
Lavender-Blueberry Crumb Cake
It’s not very pretty but it makes up for it with taste! :D

4 tbsp. butter or margarine, room temp

1/2 cup honey
-
2 large eggs
-
1/2 cup milk
-
2 cups unbleached flour
-
1 tbsp. baking powder
-
1/8 tsp. salt
-
2 cups fresh or thawed blueberries
-
1 cup blanched sliced almonds
-
1 tbsp. fresh or dried lavender flowers
-
1 tbsp. white sesame seeds
The topping:
- 1 cup packed brown sugar
- 2 tablespoons flour
- 1 stick butter or margarine, room temp
- 1 teaspoon cinnamon
- 1 teaspoon freshly grated nutmeg
Directions
To make the cake, cream the butter & honey until light. Add eggs & mix well, then add in milk. In another bowl stir together the flour, baking powder & salt & add to creamed mixture & blend well. Fold in blueberries, almonds, lavender & sesame seeds. Spread the batter into a greased & floured 9-inch baking pan. Combine topping ingredients until crumbly, then sprinkle evenly on top of cake batter. Bake at 375 until it tests clean.

You still get the credits. It’s just getting them faster, they still count.
bluh… well turns out i cant take tests for financial accounting according to my schools policy :| oh well, a little time now and a nice paycheck in the future

I’m finishing up a degree I started twenty five years ago. O_O And thankfully as an “adult-education” class that is completely online we can pretty much take as many CLEP tests as we want, they reward us (and give us old farts a break) for “Life Experience at the School of Hard Knocks”. Too bad you can’t take them. I hope everything works out.
I’m just grateful 25 year old credits transferred at all. 43.5 credits is nothing to sneeze at after so long. *whew*

I need something called “Access” and it didn’t come with my little bros student 2007 package. She said on her website that the school might give us a download and code for Access 2010 so I might try that since I have Excel, PP and Word, but it might not be guaranteed.

If this is a no-brainer class for you, talk to your student advisor and see if you can take a clep exam and just pass out of the class entirely.
I did that with the bone-head “Computer Literacy” class they make every online student take. Oh lord I read the description of the class, realized I could freaking TEACH IT and immediately contacted my Student Advisor with a “GET ME THE FUCK OUTTA HERE!!!!” type of pleading e-mail and he is scheduling me a CLEP exam and withdrew me from the class.
I’ll spend $70, take a test, pass it, get three credits.
I save 5 weeks time and about a grand in tuition costs but still get the full three credits toward my degree. LOOK INTO THIS it is available for all student at almost all colleges nationwide.
